Prep
- Preheat the oven to 300 degrees.
- In a food processor, add the nuts. Quickly pulse 4 times making sure you still retain some large pieces of nuts. In a large mixing bowl, stir together the coconut oil, syrup, sugar, salt, and vanilla extract. Transfer the nuts to the mixing bowl, then add coconut flakes and chia seed. Combine well, then transfer to a large lined baking sheet. Press down evenly into a thin 1/4 inch layer.
- Bake for 15 minutes. Stir the seeded granola, then bake for an additional 15 minutes. Set aside to cool. Store leftover granola in airtight container.
- To make your parfait, layer with the super-seed granola, yogurt, a drizzle of tahini and agave, and fruit of your choice.
